so today’s lunch was this amazingly delicious recipe from The Simple Veganista:
http://thesimpleveganista.blogspot.com/2013/09/mashed-chickpea-salad-sandwich.html
Tahini lemon cold chickpea salad over tossed greens, avocado and whole rye bread
It’s so freaking good!! I’ve made three of her recipes so far (lentil loaf, carrot coconut pancakes and this salad) and each one is better than the last. Totally recommend.

Guest enthusiast deargorgeousnyc brings us a homemade egg salad sandwich with celery on whole wheat.
If you only had eggs and celery, you’d be like, “What am I supposed to do with just eggs and celery?” But then mayo walks in the room and you’re like, “OK, I get it. Egg salad.” Mayo is powerful enough to take two food concepts as far removed as “eggs” and “salad” and bring them together into something more beautiful than either of them separately.
Mayonnaise makes everything awesome.
