For dinner in Minneapolis, we ate at Birchwood Cafe. It’s not a vegan or even vegetarian restaurant, but they had a bunch of options. They were really into using local ingredients and knowing where your food comes from, which seems to be what a lot of Minneapolis and St. Paul are into.
Me and Daniel got the same thing - a soup and sandwich combo with Borscht and a Roasted Three Seed Sandwich. Daniel never had borscht before, but liked how beet-y it was. It was topped with tofu drizzle which was tasty. The sandwich was way better than we thought it would be. The three seed spread, made of pumpkin, sunflower, and sesame seeds, was like a thick pate. Along with it were crisp fresh vegetables all on a delicious focaccia bread. It was made with good ingredients and it showed.
